I couldn't find a logical difference between loose sugar and it in cube form. So I just put some sugar in another glass with a shot of bitter and enough water to mostly dissolve it.

The difference is even distribution. You pour the absinthe over the cube to dissolve the sugar. But if it makes you feel any better, most of the bars in New Orleans just use simple syrup.
