Thank you . I love baked beans, but usually just heat up Bushes baked beans. Maybe I should try making my own recipe. Love armadillo eggs, best tailgate for football games!
My secret ingredient... What ever amount of bacon they recommend for baked beans triple it!

Let me ask the brethren...

I've been getting good smoke results in the Weber kettle, but it can be a pita getting the temperature consistent over a long smoke.

Looking for ideas for a upgrade - smoking only, no need for grill capabilities. Prefer under 500 smackers if feasible for a quality set and forget. Open to pellet, charcoal, propane or electric.

Have you tried the SNS slow and sear with the kettle. Just light a out 5 briquettes in one corner of it. Once there ready dumb the rest of unlit charcoal in along with 2 to 3 wood chunks space out. Takes a little time to come up to temp. But with the water pan full. But can usually get 6- 8 hours with it when doing a brisket. Have to add charcoal after 8hour to finish brisket that takes about 10 to 12 hours. Or if you prefer old school offset. Oklahoma Joe Highlands run about $300.
 
Oh, forgot 1 thing if using slow sns sear in kettle have to place vent opposite slow and sear basket which makes guage useless because it's directly over fire use a grate mounted remote probe to monitor and set vents for pit temperature.
 
The Big Green Egg is superb at holding temperature but fails miserably in staying under $500. Perhaps a different Kamado style grill would work to keep the temperature constant.

In the BGE I have done 12 to 16 hour smokes with out getting close to exhausting the charcoal and wood.
 
Also the ThermoWorks Signals with the Billows keeps temperatures spot on.




If you are happy with the kettle, this setup might make it a lot easier.
 
I think I narrowed it down to OK Joe Highland or the Weber Smokey Mountain 18". Decisions, decisions.

How much tending does an OK Joe need during a long smoke?
 
Having read a little more....
I narrowed it down to an OKJ Bronco or a WSM.
Then added a Masterbuilt gravity 560. Then removed the Bronco for limited availability and it's my birthday week and I want it nooooow.
 
Decision made....to postpone. Nearly bought the MB gravity but looked at it in person and tried to figure out where it would go in the yard.
Figure out yard, install a few stones. Tidy up. Buy in fall when they go on sale.
Profit.
