Smoking some ribs today. Rubbed them down last night and they're now about an hour in. Putting the mesquite to it. Used to use hickory, but lately I've been loving the flavor of mesquite.

Repositioned and replaced temperature guage( tell tru gauge). Grate level near exhaust. Temperature pretty even all the wat across.
clamps to lock door down for best seal to door seal gaskets. Fireplace gasket sealant on every joint. ( firebox to cookchamber, all smokestack joints
