Leftover bombay chicken and thai fried rice.
My wife sent me a recipe for scallops. So I took on the challenge. Up to this point I’ve not been successful in being able to properly sear them. Well, I conquered tha nemesis. Came out fantastic. Basically it was seared sea scallops (using olive oil) over a bed of corn kernels, scallions (lots of scallions - love them), garlic, parsley, Serrano pepper and smoked sausage. Both the wife and son gave it a big thumbs up. And I took a pic after plating but before digging in.
