The TSC Coffee Shop

Brewed up some "Hawaiian Harmony" @gobucks5485 sent me. DELICIOUS!!! Already have a bag of the "100% Kona Peaberry" en route. May have to get a full bag of this one as well!

I went to this roasters a couple years ago for my first trip to Hawaii! Their cafe was really nice. We ordered a few varieties of their beans, but I have not managed to dial in the grind properly....I might have not cleaned out my grinder sufficiently before attempting. Have to get back to those, because we adored the coffee when we were there!

My current set up:

I have always loved a good cup of coffee/latte, but it only relatively recently became more of a home obsession!

The first part of the gear attained was the Brevelle Bambino Plus...and for a little bit of time as I was researching grinders (talk about a rabbit hole!) we were just using coffee ground for espresso by a roaster in LA called Regent - who roast wonderful coffee. But I wanted to be doing it myself. After a bad experience with a specifically single does grinder (which I think was maybe the DF54 by Turin?) I decided on the Bratza Encore ESP Pro, which I believe is a newer, step up from their pretty well liked Encore ESP. I like that it has a hopper - we don't keep it loaded with beans - but I often put 2 measured amounts in at the same time to make me and my wife lattes at the same time.

The scale is a Christmas addition, and is fun to use, as well as helpful with understanding the variables that are getting you to the best possible cup. I definitely feel a connection to my straight razor journey as I get into this hobby...they challenges, frustrations, confusing inconsistencies - and then the shear joy of nailing it! As I sit here typing, enjoying a lovely latte with beans from Beach City here in LA, it all feels worth the fiddling and occasional pulling out of hair...

Trying to do the 2022 brewers cup championship recipe, except with the v60 brewer.
20 grams of coffee
250 grams of water split into 50 gram pours
45 second pauses between pours.
Device in filter is melodrip lift.
each 50 gram pour is 40 grams over middle where screen part is. Then 10 grams around edge. Scale timer shows total brew time I got.
Brew ratio is 1:11, soaked a strong coffee do far. Tried 2 times. Ground courser on second attempt that gave me time on scale was better. Could taste only 1 of the tasting g notes listed on bag. Think because not same brewer he was using and don't have the same coffee will be an issue. Have the Lily Lotus brewer thingy now, do I can try a flat bottom kalitta wave filter once I get those in. Will make brewer more similar to the MK brewer he was using. Definitely enjoying playing around with this.

Mail call: Coffee from Good Brother's Coffee. They specialize in mainly light roast. Kinda pricey, but I get some once in awhile because it's awesome. Have to let them rest a few weeks to degas ultra fresh. Hr usually roast to order. I've gotten some from him before thst had been roasted only 2 days before I got them .

2022 Brewers Cup Championship Recipe retry (modified).

Since I don't have the 2 coffees he used in a layered method. Don't have the brewer he used (modified MK Dripper). Or the expensive Siberest fast filter papers. Got to experiment.

Reduced coffee from 20 grams to 15 grams ground at 30 clicks on Normcore V2 flat burr hand grinder.

Installed Lily Dripper into Hario V60 modified paper to fit over Lilly Dripper.
Install Melodrip Lift.

Pour method: each pour is 40 grams in center of melodrip 10 grams outer ring. 5 pours to 250.
45 seconds between each pour.
Definitely alot better. Strength of coffee not overpowering tasting notes now. Still a little strong for my taste. Probably because of longer brew time extraction. But I now can taste 2 of the tasting notes on bag. Definitely taste the caramel and hazelnut. Can't taste any red berries yet. Gonna try grinding coarser to see if I can get that last tasting note. Definitely love the challenge of playing with different coffees and brew methods.

Edit: once coffee was completely cold red berry knot came out, so very close. Definitely gonna try a little coarser grind to try and bring it out qhen coffee hot
