With the new weight loss challenge underway, and some of us doing keto, or contemplating starting a ketogenic lifestyle, Amber and I thought it would be a good idea to start a thread where we can post our favorite keto recipes. Keto seems daunting at first, but it can also be very easy.

One of my favorites is a super easy, and crispy pizza crust.

1 cup almond flour
1/3 to 1/2 cup Parmesan cheese
1 egg
2 Tbsp olive oil
Seasonings to taste

Stir together flour, cheese, and seasonings.
Whisk together oil and egg. Mix wet & dry ingredients to uniform consistency. Will form a dough, of sorts. Put between two sheets of parchment paper and roll out with a rolling pin as thin as you can, somewhere between 1/8” - 1/4”. Will fit a large baking sheet. Bake at 350* for 10-15 minutes. Then top pizza as desired and bake until cheese is melted.

Once pre-baked, this crust can be frozen as well.

Also, if you cut the flattened out dough into squares with a pizza cutter, prior to pre-baking, this recipe makes great keto crackers!

Cheese taco Shell ( very hot frying pan Choice of cheese, Fry until somewhat brown and mold to taco shell shape
1 lb 80/20 cooked and crumbled
McCormick hot taco seasoning ( or seasoning of choice )
shredded mexican cheese
shredded cabbage
sour cream
Avocado salsa
per serving 154 cals, 1.3 carbs, Protein 14.8 Fat 11.4

Dave's Keto Jalapeno Pesto Pizza
1/2 cup cauliflower
1/8 cup pine nuts
Jalapenos 5 chopped
Basil Pesto sauce 8 oz
Parmesian Cheese 1 cup
2 cup grated mozzerella
1 teaspoon Xantham Gum
1 egg
1 4/2 cup water

Crust is created by adding all dry ingredients, add egg, parmesan water and italian seasoning. Pre heat oven to 400 with pizza stone in. From crust to 12-14 inch pie, roll edges bake on pizza stone fro 14-17 mins. Take from oven and allow to cool. Mix Pesto and Jalapenos in Food Processor, add Tablespoon olive oil. Add sauce to pixzza crust with toppings and bake for 11-14 mins cut into 10 slices
Per slice: 189 cals, 4.7 net carbs, protein 13.2, fat 13.5
 
Dave's Keto Shake w/Avocado post fast morning
1/2 avocado
handful baby spinach
1 egg
Keto Power Keto Protein Chocolate Shake mix
Purified water 16 oz
mix together with ice in blender
236.2 calories, 2.9 net carbs3.4 fiber, 12.6 protein, 18.7 fats

Dave's Spicy Kimchee Ramen
2tbsp Spicy kimchee by Nasoya
PAsta Zero plus Shiritaki Spagetti by Nasoya
Siracha or Sambal to taste
Himalayan salt to taste
Pepper
unsalted organic Irish Butter ( Kerrygold )

Drain and rinse noodles for at least 10-15 minutes under cold running water ( to get out "earthiness")
parboil for 2 mins in salted water
dry noodles by heating in very hot non stick pan for 3 mins, add butter and kimchee stir for another 5 mins bowl and place other items in bowl and stir
48 calories, 4.5 net carbs, .5 protein, 3.0 Fat

Peanut Butter Fat Bombs - peanut butter cups ( Dr. Berg Recipe )
yeild 32 cups
Candy cup molds ( can be purchased at any hobby store)
1/2 cup Natural virgin coconut oil
1/4 teaspoon Vanilla Extract
1/2 cup NOW Organic Coco Powder
1/2 natural peanut butter ( no salt or Sugar added ) or Tahini
3 tablespoons Swerve Powdered sweetener

Heat cocnut oil, vanilla, coco powder, . Fill cups partially and put infreezer for 10 minutes. mix peanut butter and swerve. once cups are set put a dollop of peanut in middle and spread, put remaining chocolate on top to edge and freeze for 2 hours. then keep in freezer in Zip Lock

1 serving = 1cups
56.6 cals, .07 net carbs, .8 sugar alcohol ( safe ) 1.1 protein, 5.7 fat
 
KETO Cheese Enchiladas
Yield 7 Servings
Keto Tortilla Shells ( The Diet chef recipe ) Keto Tortillas Recipe (Low Carb, & Made With Almond Flour)

2 cups shredded sharp cheddar cheese
1/4 cup sour cream
20 oz Red Enchilada Sauce by Signature kitchen ( or home made )
6 oz Chopped Green Onions'

Prepare Tortillas per above link
take shredded cheese mix with sour cream, salt, pepper, minced garlic, cumin, coriander ( to taste )
dip tortillas in enchilada sauce coating both sides
place tablespoon dollop of cheese mixture in torilla and roll and place in baking pan
cover with enchilada sauce and top with a genrous amount of shredded cheese
bake for 35 mins at 350. take from oven allow to rest mins and top with Black olives and remainder of green onion

Serving Size 3 enchiladas
551 cals. 8.6 net carbs, 11.3 fiber, 24.2 protein, 42.1 Fat
 
Keto folks that like Tater Tots

Keto Cheesy Tots
2 Cups Raw Cauliflower
1 tablespoon Dry Minced Onions
1/2 cup grated parmesan Cheese
1 egg
1/4 cup grated mozzarella cheese
1/2 teaspoon Xantam Gum
1/4 Salt
1/4 teaspoon Black Pepper
1/4 teaspoon minced garlic

Process cauliflower to crumb like consistency, drain an remove excess water in cheese cloth. Mix in Onion, Parmesan, Mozzarella, garlic, salt, pepper and xantham gum.
Mix in egg and blend with mixer
let stand for 30 mins
Pre heat Air Fryer 400 degrees
Form Tots into Pecan size cylinders and blunt ends
Air fry to Golden Brown, salt to taste
enjoy with Sugar Free natural ketchup, or your own Mayo based dipping sauce

Yield: 4-servings
Macros per serving 10 Tots: 117 cals, 2.0 net carbs, 1.4 fiber, 10.1 gram protein, .05 sugar ( onion ), 7.7 fat
 
KETO Cloud ( oopsie ) Bread (use this in place of toast, english muffin, hamburger buns, or sandwich bread)

4 large raw eggs
1/3 teaspoon
2oz cream cheese
Italian Seasoning or your favorite seasoning blend
1/2 teaspoon sea or Himalayan salt
1/4 teaspoon Garlic powder

Preheat oven to 300 degrees, line two large baking sheets with Parchement paper
Separate egg yolks from egg whites. Place whites in stand mixer with whip attachment. Add cream of tartar and mix on high until a firm meringue form with peaks. move to separate bowl
place cream cheese in mixer bowl add egg yolks one at a time to soften and incorporate, beat until smooth
gently fold the meringue into the yolk mixture as little as possible.. Mixture should be firm and a bit foamy.
Spoon 1/4 cup portions onto baking sheets and spread into 4-5 inch circles, leaving some space
Bake for 15-18 mins. Should be golden on the outside and be firm throughout. Cool for 15 mins and use as you would regular bread or buns.
refrigerate unused and will keep for 4-5 days

Yield : 11+
Serving Size 2 pieces
Macros: 46.9 cals, .06 net carbs, .04 natural sugars, 2.6 protein, 3.7 fat ( all in grams )
 
KETO Chocolate Desert ( Wendy's Frosty or Soft Serve )

Yield: 2 servings 3-4 oz
3/4 cup heavy cream
10 drops Stevia or 1/8 cup Swerve Icing replacement or sweetener of choice
2 teaspoons Unsweetened Organic Cocoa Powder or Cacao Powder
pinch of Salt
2-4 drops of Vanilla Extract ( to taste )

With Hand mixer or Stand mixer with Whip attachment mix all ingredients on high until still peaks form
transfer to dish, bowl or cup.

Options:
Can de eaten immediately as a mousse, topped with more Stevia sweetened Heavy cream
Can be frozen for 25-30 mins and served as an ice cream
Can be blended again once chilled to make a Wendy's style Frosty

Macros: Per Serving
6 net carbs, 31g fat, 1g fiber, 7g protein, 311 calories
 
Low Carb KETO Chips
Salami / Parmesan

Chub of 2in diameter Salami cut into thin slices
Shredded Parmesan
Smoked Paprika
Baking Sheets / Silicon or Parchment paper

set oven to 450
spread out salami slices leaving about a one inch gap
Mound with a good dollop of parmesan
Sprinkle with Paprika

Bake until golden brown and bubbly with salami just crisp let cool.
