With the new weight loss challenge underway, and some of us doing keto, or contemplating starting a ketogenic lifestyle, Amber and I thought it would be a good idea to start a thread where we can post our favorite keto recipes. Keto seems daunting at first, but it can also be very easy.
One of my favorites is a super easy, and crispy pizza crust.
1 cup almond flour
1/3 to 1/2 cup Parmesan cheese
1 egg
2 Tbsp olive oil
Seasonings to taste
Stir together flour, cheese, and seasonings.
Whisk together oil and egg. Mix wet & dry ingredients to uniform consistency. Will form a dough, of sorts. Put between two sheets of parchment paper and roll out with a rolling pin as thin as you can, somewhere between 1/8” - 1/4”. Will fit a large baking sheet. Bake at 350* for 10-15 minutes. Then top pizza as desired and bake until cheese is melted.
Once pre-baked, this crust can be frozen as well.
Also, if you cut the flattened out dough into squares with a pizza cutter, prior to pre-baking, this recipe makes great keto crackers!
