Today’s handiwork. Full sourdough leavened round loaf, 70% locally sourced heirloom Red Fife whole wheat flour. I followed the Tartine Bread process and got, hands down, the best loaf of whole wheat I’ve ever made. Oven spring was phenomenal.

Those aren’t my generation’s snacks. Never heard of them before their comeback. Bought them for Amber, who flipped when I gave them to her!

I have this process down cold at this point. That said, there is a lot of nuance to it, and I really had to commit to following the recipes to the letter to get reproducible, high quality results.
