Looking forward to giving these beans a go. I am hoping they aren’t as bright and acidic as Tanzanian pea berry
Since it looks like a dark roast, that might help s little, but peaberry is a unique bean defect. Not a complete 2 piece seed. Only half and usually more rounded. And typically slightly more acidity. Darkrr roast work better for this type of bean to evrn it's taste out. If you prefer less acidic coffee eould recommend not chossing peaberry. Their called peaberry because of pea shape style of seed.
 
Used my Cuisinart Burr Grinder for the first time yesterday with a fresh bag of Single Estate Beans I picked up from a local roaster...Brazil Juliano Vilas Boas from the Conceicao Das Pedras region. Used a coarse grind for the french press and man was it some good stuff. A little fruitier than I was expecting...but good stuff none-the-less!

All I have to say is...where has a bur grinder been all my life?

Definitely a perfectly fine grinder for French Press and pour-over. I had this as my first grinder. Didn't bother with a blade grinder(didn't want to eyeball everything). But this could not handle espresso grind so went to a Niche Zero grinder end game grinder all the way.

Catching up on the coffee shop post. I started with that espresso machine. Nice gor a beginner entry level, it uses pressurized baskets. Did like it, but my zOCD kicked in do got a Breville Infuser and end game grinder(Niche Zero) so now happier gor now 🤔)wish could afford a better machine like a Lelit Bianca 🤪nice setup. Don't fall down rabbit hole like me.

Oh, that was my first one. I have fallen down the rabbit hole big time. I’ve been very happy with my Breville impress. I’ve had it for about six years now.

So I did something I had been thinking about for awhile. I fermented some geeen beans. I had some Kenyan beans tucked away for quite some time so I figured it was worth a go. I used some old yeast I also had for awhile and added a handful of some Christmas tea I had on hand. The process was pretty simple but did take a larger jar than I had anticipated (fortunately I started with a very large jar so it had plenty of room to expand. If I do it again I will use a burping lid so I don’t have to worry about it exploding on me. I let it go for a put 2 days then rinsed it and set the beans out in the sun to dry for another couple days. I enjoyed the smell of the fermenting beans and the way they smell as they roasted. They smell a bit fruity and different. They roasted up into a nice medium roast with no real effort. I don’t know what I was expecting but I am still trying to,decide how I feel about the taste. They definitely picked up some cinnamon and clove from the tea and maybe some of the actual black tea flavors too. They taste like they smell, which is complex, fruity but also simple, linear and mellow. Reminds me a bit of Kopi Luwak beans only more flavorful (despite their fame and rarity I found Kopi Luwak to be quite mellow and unremarkable)
 
When I used to roast my beans I found that letting them rest for a week before brewing allowed them to develop more complexity and improved overall taste. May want to try that.
