I’ve been lazy and haven’t posted a cook in a while...

Pizzas tonight! Tried a new dough recipe and technique and it worked great! Resulted in a much more even and round dough with a bit more crust. Definitely will be using this method going forward.

Note that the pizza in this photo is a bit... misshapen... It’s due to the fact that I got a bit cavalier with the peel and *almost* lost it off the back of the stone. Luckily I have heat resistant gloves and was able to grab it! 😂
 
Looks great! I’ve not tried wrapping in peach paper—do you find it superior to aluminum foil? I’d imagine with the paper you cannot add any additional braising liquid.

The flavor profile is so good with the paper. It absorbs more flavor. Do some research, foil can actually dry the meat which is why you need to braise more. Switching to peach paper literally upped my smoking game
