Turkey went on the smoker around 6:30 this morning. This was a couple hours ago. Still have a couple hours on the smoker. Brined it for a little over 24 hours and last night made a compound butter. Put some butter under the skin and pasted the outside of it with the rest of the butter. Then did a light dusting of salt pepper and garlic. I spray it with pineapple juice about every 40 minutes. We will see how it turns out.

Dont forget to bump up the smoker temp to about 350 for the last 40 min or so, that way the skin isn't rubbery
