What ya eatin?

i need to try out that style of bread, i hear dutch ovens are perfect for those types of bread but have yet to try it yet. have you made many boules?
I really just make it for the holidays or if I'm entertaining. Definitely recommend the Dutch oven method (preheat the Dutch oven before you put the dough in it). But you can also get good results with just a sheet pan if you have a water bath on a lower oven rack. Use parchment paper with both methods. Single edge razor blades also make a very good lame' (for making designs or slits in the top of the bread.)
 
I hve yet to do any lamimg, so far ivr only made foccaccia. I do want to go the boule route tho and learn how to make cibatas as well as other types of vreads with aourdough

Good luck! It's time consuming, but it's a lot of fun. And usually tasty.

If you ever go the package yeast route, I highly recommend Red Star yeast. Fleischmans is garbage and has never given me good results.
 
@richgem are you using a stand mixer or do u e everything by hand?
I generally do everything by hand but have been known to "cheat" with a stand mixer when I'm pressed for time. It also depends on how much I want to fight with my counter or more accurately the stuff on my counter... My kitchen isn't the biggest and is short on counter space.
