Regrind or food process 2lbs of 85/15 ground beef.

1 egg
1 tsp sumac
1 tsp salt
1/2 tsp pepper
1/2 tsp tumeric

Mash, squish, massage, and manhandle for quite a while until it turns into magical paste. Then using a technique handed down by generations and with a hand frequently wetted in a bowl of warm water the mixture is applied just so to flat skewers.
