What does the twist cap do? Is that for easier cleaning?
Pretty much. The shank is just an open air chamber, allowing the tar to condense and collect. The valve cap can be removed during smoking to empty these products. Overall it allows for a cleaner smoke without any "tongue bite" (aka when tar comes up the stem and into the mouth), and is frankly less maintenance during smoking as well (no need to stop, wait to cool down, run a pipe cleaner down the stem, etc).

Here is a pic (not mine) of a disassembled Kirsten for reference. The bowl and the stem/nib are not directly connected, providing the air gap.
