So just a side note, the filling is very good on its own with crackers. This was the first time I have made it.

Filling is a Smoked Pimento cheese spread...
  • 1 block of smoked cream cheese with BBQ rub of your choice (I used Killer Hogs - The BBQ Rub) - smoked about 1.5 - 2 hours at 225F
  • 8oz brick of Sharp Cheddar Cheese grated
  • 2 table spoons minced pimentos (@NurseDave, see there were veggies 🤣)
  • 1 table spoon minced garlic
  • 1 table spoon minced onion
  • salt and pepper
 
waiting on a small joe jr kamado! supposed to be delivered tomorrow. Unfortunately i am headed to SC for the weekend, so i’ll be happy if i can a burn and cook on it wed or thurs.

Hoping this will be a best of both worlds for a a quick small cook sesh that i get asked a lot to do.
