You can substitute canned ingredients for many of these which would make it easy if you were out camping.
2 C. Corn
2-3 Zucchini (sliced)
2 C. Tomato (1 can diced or a large Beefsteak tomato, diced)
1 Onion medium (diced)
3 -4 Anaheim Pepper (The long green chiles - diced)
Garlic 2 cloves minced
Salt
Pepper
1Cup water (if using canned veggies- use that liquid instead)
*Shredded longhorn or medium cheddar to top before serving (as much as you like)
Simmer until tender, stirring occasionally.
Did I mention, you might want to double or triple the recipe. Doesn't sound like much, but this is healthy yummy comfort food, and you can adjust to your taste, like using a hotter pepper if you like. I'm growing some Poblano pepper now so I'm definitely throwing those in this next time.
